Today’s culinary creation is fresh baked mini bibingka! Bibingka is a Filipino rice cake. In the Philippines they serve it a lot during the Christmas season and at various family parties. It is not Christmas yet nor is there a party but I decided to make some bibingka recently just for some brekafast treats. I made mini ones about the size of cupcakes. These little bites are perfect for a quick breakfast and match great with some hot chocolate :). For my bibingka, I topped them off with cream cheese. Other versions of this cake are topped with salted egg or grated coconut. No matter what topping, these treats are awesome especially if they’re eaten right out of the oven.
